Job Purpose:

primarily responsible for the sanitation, cleanliness, and proper collection, washing, sanitation and supply of the safe cooking tools. Cleanliness and maintenance of the equipment and provision required for the kitchen staff is required, in order to produce high quality food, safely and compliantly. The Kitchen Steward is also responsible for identifying, collecting, and discarding all refused, worn and/or broken equipment. The Kitchen Steward will cross-train to be able to prepare cold and hot food during off-periods to support production in critically busy and slow times in the same sanitary and compliant manner as the culinary positions prepare cuisine.

Responsibilities and Associated Duties
:

Under the direction of Management, primary responsibility is to clean and organize the kitchen, storeroom and locker. Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.

The Utility/Steward will conduct himself or herself in the utmost professional manner whether they are processing soiled trays, pots, pans, utensils and trash receptacles in support of fellow team members or working with external customers and peers.

Duties includes:

regular cleaning of refrigerated areas

Cleaning of restrooms

Organization of produce and dry goods

Cleaning and removal of trash

  • The Utility/Steward will be responsible to ensure food safety and HACCP compliance in the ware washing, sanitation and calibration of cleaning equipment and dish machines.

  • The Utility/Steward when working in the kitchen will follow all system order requirements, Allergen & special diet requests while using company procedures related to culinary quality, satisfaction, safety, and proper food cost.

  • Maintains a safe, orderly, and sanitized kitchen by setting quat-sanitizer stations, monitoring and journaling temp-logs and using gloves, and food safety tools and best practices when cooking and working in the kitchen.

  • Receiving deliveries, stocking per HACCP guidelines, assisting with inventory and understand the FIFO system

  • Operate dishwashers, pressure washer, steam cleaner and chemical calibration systems.

  • Work directly with the Chefs to ensure that ACW (Air Culinaire Worldwide) sanitation standards and procedures are accurately reflected in their day-to-day operations.

  • When called upon, the KM will safely operate company vehicles and drive in compliance with all local and federal laws and regulations to support operations.

  • The Utility/Steward must maintain ServSafe certification and maintain food safety training assigned on Schoox at all times as well as Allergen Training.

  • Dress professionally and within the guidelines of Company procedures including the company approved uniform.

  • The Utility/Steward will cross-train to be able to prepare or produce hot food in the kitchen, or drive, as secondary duty when business is slow and staffing shortages occur.

  • All other duties as assigned by Management.

Knowledge, Experience and Skill Requirements:

  • High school diploma or its equivalent required, with kitchen experience and basic food knowledge.

  • Demonstrated ability to take orders and follow through as well as work well with others in a team-driven, fast-paced environment is essential.

  • Must be energetic, enthusiastic, creative, and highly motivated.

  • Must be energetic, enthusiastic and highly motivated to assist in food preparation and presentation when called upon.

  • Clear driving records preferred, and be able to pass a FAA on-ramp security clearance and pre-employment and random drug and alcohol screenings.
